Conjugated linoleic acid (CLA) is a polyunsaturated fatty acid with outstanding properties. CLA acid has a number of valuable dietary properties. It also positively influences the functioning of the immune system. Ruminant meat contains significantly more CLA than meat from monogastric animals. This is due to the fact that CLA is mainly produced in the processes of bacterial biohydrogenation of linoleic acid in the rumen (the most important of the forestomachs in ruminants).
